Instructions

Step 1
Preheat your oven to 425°F (220°C).
Step 2
Toss the cauliflower florets with olive oil, kosher salt, and pepper until evenly coated.
Step 3
Spread the florets in a single layer on a baking sheet.
Step 4
Roast for 25 to 30 minutes, or until the florets are caramelized and tender.
Step 5
While the cauliflower is roasting, combine the yogurt, grated garlic, chopped herbs, salt, lemon juice, and zest in a food processor.
Step 6
Blend until the sauce is smooth.
Step 7
Spoon the roasted cauliflower onto a serving plate and top with the herbed yogurt sauce.
Step 8
Garnish with the nuts and extra cilantro.
