Ingredients
2 servings
1 x 9 ozcheese-filled tortellini
pack
1 Tbspolive oil
1 lbItalian sausage
mild or spicy, casings removed
3cloves garlic
minced
1onion
small, finely chopped
1 ½ cupsheavy cream
½ cupchicken broth
½ cupgrated parmesan cheese
1 ½ cupsfresh spinach
roughly chopped
1 tspchili flakes
optional for heat
salt
to taste
black pepper
to taste
GARNISH
Instructions
Step 1
Heat olive oil in a large skillet over medium heat and cook the sausage until browned breaking apart into small bite size pieces
Step 2
Remove and set aside, leaving a bit of fat in the pan for flavor.
Step 3
In the same pan, sauté onion until translucent. Add garlic and cook for 30 seconds until fragrant.
Step 4
Pour in heavy cream and chicken broth; bring to a gentle simmer. Stir in Parmesan, salt, pepper, and chili flakes.
Step 5
Add cooked tortellini and browned sausage into the pan.
Step 6
Toss in chopped spinach; cook until wilted and sauce thickens slightly (3–4 minutes). Taste and adjust salt/pepper if needed
Step 7
Plate it hot, drizzle with a little chili oil.
Step 8
Sprinkle with fresh parsley and extra Parmesan.
