Instructions
Step 1
1. Preheat oven to 175 °C (350 °F). Line a 12-cup muffin tray with liners or spray with non-stick.
Step 2
2. In a large bowl, mash bananas, then add yogurt, trim milk, eggs, and vanilla. Whisk until smooth.
Step 3
3. In a second bowl, blend oats into fine flour, then stir in protein powder, baking powder, salt, and cinnamon.
Step 4
4. Add the dry mix to the wet ingredients and stir gently until combined (don’t over-mix).
Step 5
5. Fold in the grated apple, chopped walnuts, and chocolate pieces.
Step 6
6. Divide batter evenly between 12 muffin cups (about ¾ full each).
Step 7
7. Bake 18–22 minutes, until a toothpick comes out clean.
Step 8
8. Cool in tin for 5 minutes, then transfer to a rack to finish cooling.
