Instructions
Step 1
Preheat oven to 400 degrees.
Step 2
In a large bowl, whisk together flour, baking powder and salt.
Step 3
Add yogurts to the flour bowl and mix with a spoon or spatula. The dough will look broken here. Just mix until all yogurt is absorbed.
Step 4
With your hands, knead the dough for 5 minutes. The dough will be very sticky at first. Knead for the full time and if the dough is still too sticky, add in a tablespoon of flour at a time until it no longer sticks to your hands. No more than 2 tablespoons though. Again, this is a sticky dough.
Step 5
Weigh the dough and divide that number by 6. Portion out 6 dough balls according to your weight. For example, my dough balls were 89 grams each.
Step 6
On a lightly floured surface, roll out the portioned dough into logs, about 9 inches.
Step 7
Twist the dough and tuck the edges into themselves to form a circle. Place on a lined cookie sheet.
Step 8
Mix together the egg and water in a small bowl.
Step 9
Brush into the tops and sides of each bagel.
Step 10
Mix together the cinnamon and sugar in a small bowl.
Step 11
Sprinkle onto the top and sides of each bagel.
Step 12
Bake for 18-20 minutes.
