Instructions
Step 1
Combine all ingredients except water in a large pot. Bring to boil.
Step 2
Simmer for 10 minutes
Step 3
Add ice water and let cool completely. Must be room temperature.
Step 4
Combine brine and turkey in brining container. Leave overnight.
Step 5
Remove turkey, rinse and pat completely dry. (Must be dry for compound butter to stick.)
