One pan ginger-shallot chicken and rice

Instructions

Step 1
Sprinkle chicken with salt and pepper
Step 2
Heat olive oil in large pan over medium high heat. Cook chicken for 4-5 minutes turning once halfway through cooking. Remove from pan and set aside. Drain excess fat with paper towel if desired
Step 3
Add rice to same pan and stir for 30 seconds. Add chicken stock. Once stock is bubbling, add chicken, cover and reduce to lowest setting and cook for 15 minutes
Step 4
Combine ginger and shallot oil ingredients
Step 5
Once chicken and rice are cooked, remove from heat and allow to stand covered for 10 min
Step 6
Served topped with ginger and shallot oil, kecap manis and chilli oil. Serve with sliced cucumber and shredded spring onion on the side
