Ingredients

The Pork
1.5kgboneless pork shoulder
1 tspsalt
1carrot
large
2white onions
1 bulbgarlic
ginger
ping pong ball
2scotch bonnet chillies
2 Tbspcurry powder
1 Tbspgaram masala
2 tspchilli powder
2 tspcoriander
2 tspcumin
1 tspwhite pepper
200gtomato purée
2stock pots
1lwater
boiling
3 Tbspwhite wine vinegar
3 Tbsphoney
The Buns
350mlwater
room temp
1 tspdry active yeast
1 tspsugar
600gstrong bread flour
½ tspsalt
2 Tbspnatural yogurt
1 tspnigella seeds

The Coleslaw
Instructions
The Pork
Step 1
Finely dice the onion and carrot and fry in oil for 5 minutes on medium heat until soft
Step 2
Finely mince the garlic, ginger and Chillies
Step 3
Add the purée, garlic, ginger, Chillies, and all the spices and cook off for 2 minutes
Step 4
Mix the stockpots with the water and pour this in, and add the honey and vinegar before simmering for 20 minutes and blending til smooth
Step 5
Cut the pork into 2 inch pieces and generously salt all over
Step 6
Heat a deep pan to high and fry the pork on all sides for a couple minutes to brown
Step 7
Pour the madras sauce over the pork and simmer with the lid on for 2 hours, then lid off for 1-2 hours until there is only an inch of sauce in the bottom of the pan and the pork is falling apart, then shred it up
The Buns
Step 8
Mix the yeast, sugar and water and let sit for 10 minutes
Step 9
Mix the flour, salt, yogurt, and nigella seeds and pour in the yeast mixture, and mix through then knead for 10 minutes
Step 10
Place in a bowl covered with cling film and leave at room temp for an hour til doubled in size
Step 11
Cut the dough into 8 then form into small balls and leave covered for 1-2 hours until doubled in size
Step 12
Finely dice the coriander and garlic and melt the butter and mix together, cracking in salt and pepper
Step 13
Lay the buns in a ripping hot frying pan for 3-4 minutes then brush with garlic butter and put under a hot grill for 3 minutes to finish. We want some black spots on the dough

Or if you have a pizza oven brush the buns with garlic butter and cook for 2 minutes, rotating every 30 seconds
The Coleslaw
Step 15
Slice the onion and cabbage into very thin strips and grate the carrot
Step 16
Add in everything else and mix
Burgers!
Step 17
Slice your buns and assemble your burgers, adding coleslaw, pork, and any extra Chillies you want!
