Instructions

Step 1
Preheat oven to 350 F. Brush 9x13 casserole dish with 1 tbsp butter

Melt 3 tbsp butter in a large skillet, and caramelize sliced onions until golden brown

Cook pasta according to package instructions. Drain

Melt the remaining 4 tbsp of butter, then add flour. Whisk until combined. Pour over milk and continue whisking

Bring milk mixture to a boil, then reduce heat to medium. Simmer the milk mixture while stirring for approximately 6 minutes or until thickened
Step 6
After sauce has thickened and after grating the cheese, add all fontina cheese, half of the Gruyère, and half of the sharp white cheddar to the sauce. Stir until melted and combined, then remove from heat and add pasta, caramelized onions, Dijon mustard, and thyme. Salt and pepper to taste.

Dump pasta and cheese mixture into the 9x13, top with remaining cheese, and bake uncovered for 20 minutes
Step 8
Switch oven to broil, then broil on high for 2 minutes
