Instructions
Step 1
Add oil, bay leaf and onions to pan with a generous pinch of salt, cover and heat on low for 30-40mins. Stir occasionally till collapsed and soft but not browned.
Step 2
Uncover the pan, add treacle, sugar, vinegars and stir well to combine.
Step 3
Increase heat to medium low and simmer gently for 30-40mins. Stir occasionally. Cook down til the liquid is heavily reduced and turned thick and dark. When dragging a spoon through it it should briefly leave a clear space in the liquid, this shows it is done.
Step 4
Remove bay leaf. Spoon into a sterilised jar. Flavour will improve if left to mature for a week in a cool, dark place. Once open, keep in fridge and eat within 4 weeks.
