Instructions

Step 1
Marinade chicken with oyster sauce, soy sauce, and pepper for at least 15 minutes.
Step 2
Add all ingredients for wet batter mixture. Adjust the water for the right batter consistency.
Step 3
Preheat oil to 170-180°C.
Step 4
Dip chicken thighs into batter, shake off excess, and fry in hot oil.
Step 5
Fry at 150°C for 8 minutes. Ensure internal chicken temperature reaches 74°C.
Step 6
Serve with chicken rice, sweet chili or plum sauce, and garlic chili sambal.
