Sesame Chicken

Tips: When deep frying the chicken, I find it necessary to give chicken some time (10-15 mins) to cool off after the first deep-fry, this allows chicken to get really crispy outside when double fried.
You may also garnish sesame chicken with chopped scallion in the end before serving.

1 lbchicken thigh
1 TbspCooking Wine
2 ClovesGarlic

½ tspsalt
¼ tspbaking soda
1egg white
½ TbspSweet Potato Starch
½ TbspAll Purpose Flour

For the Sauce
Sweet Potato Starch Water Mixture
Instructions
Step 1
Cut boneless chicken thigh meat into 1.5 inch size pieces. Transfer to a bowl.
Step 2
Marinate sliced chicken with cooking wine, grated garlic, black pepper, light soy sauce, salt, baking soda, egg white, sweet potato starch and all purpose flour. Mix everything until well combined. Cover and let sit for at least 30 minutes to allow flavors to absorb gradually.
Step 3
To coat chicken, add sweet potato starch into a big container, simply spread it out. Add in marinated chicken. Put the lid on and shake for a few minutes until the chicken is coated with starch evenly. Transfer each coated chicken piece to a separate container or a tray, set side.
Step 4
Heat up cooking oil to 380 F or use a chopstick to test the temperature (If oil bubbles around the chopsticks, it’s ready for food to go in). Add in chicken piece by piece. In a few minutes, chicken surface will get crispy and the color is slightly yellow. Take them out, spread them out and sit for 10-15 minutes to cool off.
Step 5
Keep the temperature at 380 F, and fry the pre-fried chicken once again until chicken reaches golden brown color. Take them out and set it aside.
Step 6
In a large bowl, add in brown sugar, honey, light soy sauce, ketchup, water, dark vinegar. Mix them until well combined.
Step 7
In a skillet, add in the sauce to heat up on medium heat. Bring to boil, and pour in sweet potato starch water mixture (mix sweet potato starch with water) to stir, this will thicken the sauce immediately, so make sure it’s on low heat when adding in starch water.
Step 8
Once sauce is thickened like a syrup texture, put deep fried chicken pieces in the sauce to mix quickly, mix with sauce evenly, then drizzle with sesame oil and sesame seeds. Toss until chicken pieces are coated nicely. Remove from heat and garnish with chopped scallion, serve warm.
