½ tspbaking soda

½ tspnutmeg
½ tspginger

½ cupcanned pumpkin purée
not pie filling
½ cupmonk fruit sweetener
granulated or golden

Instructions
Step 1
Preheat oven to 350°F (175°C). Line a muffin tin or lightly grease with olive oil.
Step 2
In a large bowl, whisk together almond flour, white whole wheat flour, baking powder, baking soda, spices, and salt.
Step 3
In another bowl, whisk eggs, olive oil, pumpkin purée, applesauce, monk fruit, and vanilla until smooth.
Step 4
Add wet ingredients to dry ingredients; stir until just combined (do not overmix).
Step 5
Fold in nuts
Step 6
Spoon batter evenly into muffin cups. Mix monk fruit & cinnamon together and add on top of muffin
Step 7
Bake 18–22 minutes, or until a toothpick inserted in the center comes out clean.
Step 8
Cool in the pan 10 minutes, then transfer to a rack.
