⅓ cupmonk fruit sweetener

½ cupalmond flour
½ cupwhite whole wheat flour
½ tspbaking soda

Instructions
Step 1
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Step 2
In a bowl, whisk together olive oil, almond butter, monk fruit, egg, and vanilla until creamy and smooth.
Step 3
In a separate bowl, combine almond flour, white whole wheat flour, baking soda, and salt.
Step 4
Add dry ingredients to wet and mix until combined. The dough will be soft but not sticky.
Step 5
Fold in chocolate chips (and nuts if using).
Step 6
Scoop about 1 tablespoon of dough per cookie onto the baking sheet. Flatten slightly with your fingers or a fork.
Step 7
Bake 10–12 minutes, until edges are golden and centers just set.
Step 8
Cool on the pan for 5 minutes, then transfer to a rack.
