Instructions

Step 1
Preheat your oven to 425ºF.

In an oven-safe skillet, heat 1-2 tablespoons of neutral oil over medium-high heat. Add onion and sauté until translucent and slightly golden brown, about 3-4 minutes. Add broccoli, carrots, and a small pinch of salt. Stir and cook for 4-5 minutes, or until broccoli is tender.
Step 3
Stir in cooked barley, chicken stock, béchamel, cheddar, and the shredded chicken. Once the mixture is thoroughly combined, top with garlic breadcrumbs. Place in the oven to bake for 20-25 minutes.
