Instructions
Step 1
Prepare cornbread muffin mix according to box and pour batter on the bottom of a greased 11X7 baking dish.
Step 2
In large skillet cook beef over medium heat until no longer pink. Drain. Add tomatoes, vegetables, tomato paste and seasoning. Bring to a boil. Reduce heat. Simmer for 5 minutes uncovered. Pour over batter mix. Sprinkle with cheese.
Step 3
Bake casserole uncovered at 350* for 25-30 minutes or until golden brown. Sprinkle with green onions.
