Instructions
Step 1
Warm the olive oil in a pan over medium-low.
Step 2
Add garlic and cook gently until fragrant (don’t brown it).
Step 3
Add lime zest and optional white wine, simmer 1 minute.
Step 4
Stir in lime juice and a splash of pasta water.
Step 5
Whisk and let it bubble for 1–2 minutes until it emulsifies and thickens slightly.
Step 6
Season with salt, pepper, and Artichoke
Step 7
Turn off heat and stir in fresh cilantro.
Step 8
Toss with pasta and top with your lime-cilantro shrimp.
