French Onion Boursin Pasta Rings

If you liked our last French Onion Pasta you’re going to love this one maybe even more. It’s the same basic recipe but we switched the heavy cream and parm with caramelized onion flavored Boursin. It’s out of this world decadent and delicious and it’s perfect for a cozy fall dinner.

Instructions

Step 1
Heat 2 tablespoons butter in a large skillet. When butter melts add the ditalini and brown it a few minutes.
Step 2
Add the wine and let it evaporate.
Step 3
Start adding the first cup of broth a little at a time. Let cook for about 5 minutes.
Step 4
Add the French onion soup and stir it in with the other cup of broth. Cover and let it simmer for another 5-7 minutes until tender.
Step 5
Remove lid add the remaining butter and Boursin. If it’s too dry add more broth or water. Season with salt and pepper.
Step 6
Top with Gruyère and cover again until the cheese has melted.

For Crispy Tofu

Step 7
Wrap the tofu block in a clean kitchen towel and weigh it down with a heavy skillet or some books. Let it press for at least 20 minutes.
Step 8
Cut the pressed tofu into thin strips or bite sized cubes.
Step 9
In a medium bowl, whisk together soy sauce, balsamic vinegar, olive oil, onion powder, garlic powder. Once that's mixed, drop your pressed tofu cubes right into the bowl and gently toss them until they've soaked up all that liquid. Let them hang out for about 10 minutes.
Step 10
After letting it marinate, sprinkle in cornstarch and give them a toss. Heat a thin layer of oil in a skillet over medium-high heat. Add the tofu in a single layer (don't crowd the pan). Fry for about 2 minutes per side until every surface is beautifully golden brown and crispy.
Step 11
Serve on top of the pasta
