Peach & Horseradish Jam

Instructions

Step 1
Prep Peaches: Blanch peaches by scoring an 'X' on the bottom, dunking in boiling water for 30-60 seconds, then transferring to ice water. Peel, pit, and finely dice.
Step 2
Cook Jam Base: In the saucepan, combine diced peaches, sugar, lemon juice, lemon zest, water, ginger, salt, and pepper. Stir well. Bring to a gentle simmer over medium heat.
Step 3
Simmer & Thicken: Reduce heat to medium-low. Simmer uncovered for 20-25 minutes, stirring occasionally. As peaches soften, mash gently with a fork to break them down. The mix will naturally thicken.
Step 4
Add Horseradish (OFF HEAT): Remove saucepan from heat. Stir in 3 tbsp prepared horseradish. Taste carefully (heat builds!). For more kick, add remaining 1 tbsp. Do not boil after adding horseradish.
Step 5
Cool & Store: Let jam cool 15 minutes in the pot, then transfer to a clean jar or container. Seal and refrigerate. Keeps in the fridge for 2-3 weeks or freeze for up to 3 months.
