Instructions
Step 1
Unpack and clean off whole turkey. Remove neck and extra pieces. Save for stock.
Step 2
Prepare brine per bag info. Set turkey in bag inside of bucket. Pour in brine and fill with water. Let turkey sit in brine in fridge for 24 hours.
Step 3
Remove turkey. Cut out back bone, cut slit in breast. Turn over and apply pressure to spatchcock it. Put butter (mixed w garlic and seasoning) under any skin. Season all of the turkey.
Step 4
Put on smoker at 275. After first hour and every 30 mins, baste with butter. After 1.5 hours turn up to 300. When turkey reaches 160 in breast - remove from smoker.
Step 5
Put in cooler wrapped if serving later.
Step 6
When ready to serve, cut off wings and breasts to carve easier.
