Instructions
Step 1
Preheat your smoker to 225 degrees F.
Step 2
Pat the roast down with a paper towel. Trim fat that is over 1/4 inch thick. Score through the fat cap about 1/4 of a inch deep in a diagonal pattern.
Step 3
Rub the pork with the dijon mustard as a binder and ensure it is evenly coated. Sprinkle liberally on all sides with the Salt, Pepper, Garlic.
Step 4
Once the pork is trimmed and seasoned, place it directly on the grates of your smoker. Probe to ensure desired temps are reached. Close the lid and smoke until the internal temperature reaches 145 degrees F. This can take anywhere from 2-3 hours.
Step 5
Allow to rest for 20 minutes wrapped in foil. Slice against the grain and serve. Enjoy!
