Step 1
In a bowl, mix the dry ingredients; flour, sugar, baking powder, bicarbonate and salt. In another bowl (I use a measuring cup), lightly beat the egg, add the milk, oil and essence. Then pour the liquid ingredients over the solids, mixing just until they are homogenized, no more! If you have decided to add fruit, chocolate chips or something else, now is the time to do it. I put Nutella on top after dividing the composition into molds. If you want muffins with cocoa, reduce 40 g of flour and add the same amount of cocoa. Cover a muffin tray (24 pieces) with paper and distribute the dough, about a quarter must remain free to have room to grow. With a small spoon, I put Nutella on top of each muffin. Bake the muffins for 25-30 minutes at 180-200 °C, until they are lightly browned on top. Enjoy!
