Ingredients

Chocolate cookie
1 ½ cgluten free all purpose flour
½ cOat flour
⅔ ccocoa powder
½ tspbaking powder
¼ tspsalt
1.5 sticksbutter
softened
½ cGranulated sugar
¼ cDark brown sugar
1egg
large
1 TbspMilk
½ tspVanilla extract

Instructions
Step 1
Whisk together the flours, cocoa, baking powder and salt in a medium bowl.
Step 2
Using an electric mixer, beat the butter and sugars in a large bowl until creamy. Beat in th egg milk and vanilla
Step 3
With the mixer on low speed, mix in the flour mixture until blended and the dough starts to clump together
Step 4
Gather the dough into a ball, cover with a plastic wrap and refrigerate for an hour.
Step 5
Preheat the oven to 350. Line 2 cookie sheets with parchment paper.
Step 6
Pinch off clumps of dough and form into 1” balls and place them on the sheet around 2” apart. With the heel of your hand, flatten the balls to around 1/2” thick
Step 7
Bake for 13 or 14 minutes. Transfer to a wire rack to cool completely.
Step 8
Glazing and Garnish
Whisk the icing sugar and water in a bowl until smooth. Add the essential or peppermint flavoring. The glaze should be thick but spreadable.
Step 9
Using a spreader or a knife glaze the top of the cookies and sprinkle the candy over wet icing pressing down gently so it sticks. Alternatively you can press the cookies icing side down into the candy. Place the cookies on a rack until the glaze sets completely.
Step 10
Store in an airtight container up to 5 days.
I decorated cookies can be stored in the freezer up to 1 month
