Ingredients

1egg

1 cupcream cheese
softened
80gsalted butter
½ cupwhite sugar
1 tspbaking powder
½ tspbaking soda
½ tspsalt
⅓ tspnutmeg
½ cupmilk
1 ¼ cupflour
For the cinnamon sugar
Instructions
Step 1
Preheat oven to 180°C, and spray a 12 cup muffin pan with non-stick spray.
Step 2
Beat the egg until light and fluffy.
Step 3
Put the cream cheese in microwave proof and soften by heating in the microwave on HIGH for 1 minute. Let the bowl sit another minute and then try to stir the mixture smooth - if you can't stir smooth microwave in 30 sec increments with 30 sec standing until you can.
Step 4
Add the cream cheese/butter mix to the beaten egg and mix everything until well combined. Add white sugar & mix.
Step 5
Mix in baking powder, baking soda, salt and nutmeg until everything is throughly incorporated.
Step 6
Add in half of the milk with half of the flour quantities, mixing until combined. Repeat with rest of milk and flour, and mix thoroughly.
Step 7
Divide mix into prepared muffin pan (filling 2/3 full). Bake 20-25 minutes until golden brown.
Step 8
Approx 5 mins before due out of oven, melt another 80g of salted butter. In a separate (shallow) bowl mix sugar and cinnamon together. Dip each cooked muffin into the melted butter and then inmediately roll in sugar/cinnamon mix.
