Instructions
Step 1
Fry the onion, pepper and sweet potato or carrots gently in the oil until softened but not browned. Add the green beans, baked beans, sweetcorn (and liquor), tomato purée and barbecue spice seasoning. Bring to a boil then simmer for 5 minutes.
Step 2
Transfer the vegetables to a shallow ovenproof dish and then scatter with the cubed cheese.
Step 3
Cover the vegetable and cheese mixture with the sliced potato, brush with butter, season and bake at 190°C/375°F/ Gas 5 for 30-40 minutes until golden brown on top and the potato is cooked.
