Instructions

Step 1
Preheat oven to 400 degrees and line a baking sheet with parchment

paper. Combine balsamic vinegar, oil, garlic, basil, thyme, salt and

pepper. Whisk to make sauce. Place chicken in a plastic bag with 1/3

cup of the balsamic mixture. Toss and move chicken breast around to

coat. Set aside in fridge (you can marinate this longer if desired). Chop

veggies and place all (except tomatoes) on the sheet pan. Pour

remaining balsamic sauce over veggies and toss to coat. Remove

chicken from bag and add to pan with the veggies. Bake in oven for 10

minutes and then remove pan and add the tomatoes. Place back in

oven and bake for 10-20 minutes, depending on thickness of chicken,

When chicken is cooked completely and veggies are nicely roasted,

remove from oven. Top with additional basil if desired
