This single serving mousse is a good source of protein, healthy fats, and fiber that serves as the perfect post workout snack. It's low carb and sugar free, meaning it won't spike your blood sugar. Avocado is a rich source of heart healthy mono-unsaturated fat and fiber, which aid in heart and brain health, as well as digestion. The cocoa powder is a great source of antioxidants and fiber, and of course the protein powder adds essential amino acids, as well as sweetness. With the vanilla protein powder, this decadent and rich mousse is just sweet enough for me, but you may like some additional sweetener, just as liquid monk fruit, granulated monk fruit, honey, maple syrup, or sugar free syrup. Top with whatever you like, such as nut butter or berries!
