Ingredients

1 lbground turkey
or chicken
1 x 15 ozcannellini beans
can, drained and rinsed
½ cupfrozen spinach
thawed and squeezed dry
1egg
large
¼ cupwhole milk plain yogurt
¼ cupwhole wheat Einkorn flour
2 tblspcollagen powder
unflavored beef collagen
2 Tbsphemp hearts
1 Tbspground flax seeds
1 tspgarlic powder
1 tspdried oregano
½ tspground cumin
⅛ tspground cinnamon
1 Tbsplemon juice
Instructions
Step 1
Preheat oven to 400°F. Lightly grease a mini-muffin tin or line a baking sheet with parchment paper.
Step 2
In a large mixing bowl, mash the white beans with a fork until mostly smooth but slightly chunky.
Step 3
Add the ground turkey, spinach, egg, yogurt, flour, collagen, hemp hearts, flax, and all spices to the bowl.
Step 4
Using a spatula or clean hands, mix until all ingredients are evenly incorporated.
Step 5
Scoop 1-tablespoon portions into the mini-muffin tin or roll into small "tots" on the baking sheet.
Step 6
Bake for 15–18 minutes, or until the internal temperature reaches 165°F.
Step 7
Transfer to a wire rack to cool completely before freezing.
Step 8
To Freeze: Place cooled tots in a single layer on a baking sheet and freeze for 1 hour. Transfer to a freezer-safe bag. To Reheat: Heat in an oven or air fryer at 350°F for 5–8 minutes until warmed through. Boosters: This recipe includes brewer's yeast options; feel free to add 1 tbsp for extra B-vitamins.
