Instructions
Step 1
Prepare the fruit: In a large, heavy-bottomed saucepan, combine the crushed strawberries, diced mango and grapes. Mash to your desired consistency (use a potato masher for a chunkier jam or blend for a smoother texture)
Step 2
Combine and Boil: Stir in the lemon/lime juice and pectin. Bring the mixture to a full rolling boil over medium-high heat, stirring constantly to prevent sticking.
Step 3
Add sugar: Once boiling, stir in the sugar. Return the mixture to a full rolling boil (a boil that cannot be stirred down) and boil for exactly 1 minute, stirring continuously.
Step 4
Test for set: Remove from heat. Test if the Jam is ready by placing a small spoonful on a chilled plate - it should form a skin and not run immediately. Skim any foam off the top.
Step 5
Jar and Store: Ladle the hot jam into sterilized jars, leaving 1/4 inch headspace 1. Refridgerator Method: Let cool to room tempreature, then seal and store in the fridge for up to 3 weeks. 2. Caning Method: Process in a boiling water bath canner for 10 minutes. Refrigerator Method: Let cool to room temperature
