1. Prepare the Base

Preheat oven to 375°F. Lightly grease a 9x13 inch casserole dish.

In a large skillet, brown the breakfast sausage over medium heat, breaking it up as you go. Once cooked, drain any excess grease and set the sausage aside.

In the same skillet (or a new one), sauté the diced potatoes and onion until the potatoes are tender and the onion is translucent. This usually takes about 8-10 minutes.

2. Assemble the Casserole

Spread the cooked potatoes and onion evenly in the bottom of the prepared casserole dish.

Layer the cooked sausage and the chopped tomatoes over the potato mixture.

Sprinkle the 1/2 cup of shredded cheese over the top of the ingredients.

3. Make the Batter

In a separate bowl, whisk together the eggs, whole grain pancake mix, and milk until the mixture is smooth. Tip: The pancake mix adds a nice, slightly sweet lift to the casserole!

Pour the egg and pancake batter evenly over the casserole contents. Make sure the liquid is distributed across all the ingredients.

Bake for 35-45 minutes, or until the casserole is set in the center and lightly golden brown on top. A toothpick inserted into the center should come out clean.

Let the casserole cool for 5-10 minutes before serving.
