Step 1
Step 1 – Cook the Onion (4 minutes) Melt the butter in a pan over medium heat.
Add the chopped onion and cook gently until soft and translucent.
Do not brown it.

Step 2 – Make the Roux (2 minutes) Add the flour to the butter and onion mixture.
Stir continuously to form a thick paste (roux).
Cook for about 2 minutes to remove the raw flour taste.

Step 3 – Add the Stock (5–7 minutes) Slowly pour in the warm beef stock while stirring constantly.
Keep stirring until the mixture becomes thick, smooth, and creamy (like thick mashed potatoes).
Step 4
Step 4 – Add Beef & Seasoning (3 minutes) Add: • Shredded beef • Parsley • Nutmeg • Salt • Pepper Mix well until fully combined.
Step 5
Step 5 – Chill the Mixture (Minimum 2 hours ❗) Transfer the mixture to a dish.
Cover and refrigerate for at least 2 hours (preferably 3 hours). 👉 This is crucial — the mixture must be firm to shape balls.
Step 6
Step 6 – Shape the Balls (10 minutes) Roll the chilled mixture into balls about the size of a walnut.
Step 7
Step 7 – Bread the Bitterballen (10 minutes) Set up 3 bowls: 1. Flour 2. Beaten eggs 3. Breadcrumbs Roll each ball in this order:
Flour → Egg → Breadcrumbs For extra crispiness:
👉 Repeat egg + breadcrumbs again (double coating)

Step 8 – Fry (3–4 minutes) Heat oil to 180°C / 350°F.
Fry bitterballen in batches for 3–4 minutes until: • Golden brown • Crispy outside • Hot inside Drain on paper towels.
