Instructions

Step 1
Preheat oven to 400°F (200°C). Slice potatoes into 1/2 inch coins.
Step 2
In a large bowl, toss potato rounds in olive oil. Season with salt, pepper, cayenne, and garlic powder. Toss until evenly coated. Place on a baking sheet in a single layer. Bake for 30 to 40 minutes, until browned and tender, flipping halfway through.
Step 3
Top each potato round with cheese and bacon. Broil until cheese is melted, about 2 minutes.
Step 4
Dollop sour cream onto each potato and garnish with green onions.
