Step 1
Melt chocolate but do not boil.
Separate the eggs. Do this carefully to avoid any yolk in the egg whites. In a medium bowl, mix the cream, liqueur, chocolate and egg yolks. Blend until thick. In another bowl, combine egg whites, salt and sugar and blend until the mixture gains a texture and firms “waves.” Combine the egg white mix into the chocolate, stirring until the mixture is smooth and uniform in color. Do not blend. Place completed mousse onto cups or glasses. Chill for several hours and serve.
