Step 1

Heat oven to 400°F. Spray a mini muffin tin well or use mini liners.
Step 2

In a bowl, stir together Jiffy mix, egg, and milk just until combined. Do not overmix.
Step 3

Fold in diced jalapenos (and cheddar/melted butter if using).
Step 4

Fill cups about 3/4 full.
Step 5

Bake until golden: 10-12 min for mini or 14-17 min for regular. Toothpick should come out clean.
Step 6

Mix honey butter and serve on the side or brush a little on top while warm.
