Instructions

Step 1
Prepare Rice-a-Roni Spanish rice as directed on the box.
Step 2
In a large skillet, brown the ground beef along with chopped onions, garlic, and bell peppers.
Step 3
Add a sprinkle of shredded cheese, 1 can of Rotel, salt, pepper, and cumin to the skillet. Add your favorite beans if you like, or corn to stretch further.
Step 4
Combine all together along with the prepared rice.
Step 5
Pour into a baking dish and top with additional shredded sharp cheddar cheese.
Step 6
Bake at 350°F for 25-30 minutes.
