Creamy Chicken and Mushrooms (Oven & Slow Cooker Instructions)

Best served with mashed potatoes and a green veggie like broccoli or zucchini.

Instructions

Oven Instructions

Step 1
Preheat oven to 375°F.
Step 2
Lightly grease two 9x13 casserole dishes (or one deep large roasting pan).
Step 3
Toss mushrooms, onion, and garlic with a little oil, salt, and pepper.
Step 4
Spread evenly in the bottom of the dishes.
Step 5
Nestle seasoned chicken pieces on top.
Step 6
In a sauce pan, melt butter over medium heat.
Step 7
Whisk in flour and cook 1–2 minutes (light golden roux).
Step 8
Slowly whisk in broth until smooth.
Step 9
Simmer until thick.
Step 10
Stir in cream, sour cream, parmesan, mustard, and spices.
Step 11
Simmer until thick enough to coat a spoon. (You want it slightly thicker than you think — it thins in the oven.)

Pour sauce evenly over chicken and mushrooms.

Cover tightly with foil.
Step 14
Bake 35–45 minutes, until chicken hits 165°F internally.

Uncover the last 10 minutes if you want slight browning on top.

Optional Finishes: Sprinkle chopped parsley. A tiny squeeze of lemon to brighten it. Black pepper on top right before serving.

Slow Cooker Instructions

In the slow cooker, add mushrooms, onion, garlic. Season the chicken and lay it on top. (Do not add cream yet.)

On the stove: Melt butter and whisk in flour. Cook 1–2 minutes. Slowly whisk in broth and simmer until thick (almost gravy consistency). Stir in: Thyme, rosemary, paprika, and Dijon if using. (Do not add cream, sour cream, or parmesan yet.)

Pour this thick base over the chicken and turn on slow cooker. Low: 5–6 hours High: 3–4 hours

About 30 minutes before serving: Whisk together heavy cream and sour cream. Stir into the slow cooker. Add parmesan.

Let cook uncovered for 20–30 minutes to thicken. (Tip: If it's not thick enough, mix 1 tbsp cornstarch and 1 tbsp cold water and stir in. Allow to cook for another 5-10 minutes while it thickens.)
