Preheat your oven to 180°C (350°F) on the Convection/Fan setting. Line a baking sheet with foil for easy cleanup and place a wire cooling rack on top. Use paper towels to pat the wings until they are bone-dry.

2. The Toss

In a large bowl, whisk together the baking powder and all the spices. Add the wings and toss thoroughly until every wing is evenly coated in the dry rub.

Place the wings on the wire rack in a single layer. Make sure they aren't touching so the air can circulate around each piece.

Slide the tray into the center of the oven. Bake for 35–40 minutes.

At 20 minutes: Flip the wings over using tongs.

At 35 minutes: Check for a deep golden-brown color and a visible "crispy" texture to the skin.

Remove the wings from the oven and transfer them to a clean bowl. Pour your BBQ sauce over them and toss until coated.

Pro Tip: For "competition style" sticky wings, put the sauced wings back on the rack and bake for just 2 more minutes to set the sauce.
