​Preheat your oven to 180°C (350°F) on the Convection/Fan setting. Line a baking sheet with foil for easy cleanup and place a wire cooling rack on top. Use paper towels to pat the wings until they are bone-dry.

​Note: Moisture is the enemy of crunch!

​2. The Toss

​In a large bowl, whisk together the baking powder and all the spices. Add the wings and toss thoroughly until every wing is evenly coated in the dry rub.

​Place the wings on the wire rack in a single layer. Make sure they aren't touching so the air can circulate around each piece.

​Slide the tray into the center of the oven. Bake for 35–40 minutes.

​At 20 minutes: Flip the wings over using tongs.

​At 35 minutes: Check for a deep golden-brown color and a visible "crispy" texture to the skin.

​Remove the wings from the oven and transfer them to a clean bowl. Pour your BBQ sauce over them and toss until coated.

​Pro Tip: For "competition style" sticky wings, put the sauced wings back on the rack and bake for just 2 more minutes to set the sauce.
