Key lime chicken

Instructions

Step 1
Remove and discard the rind from 4 of the key limes. Remove and discard the stem and seeds from the chili pepper.

2. Combine the peeled key limes, chili, lemon juice, orange juice, salsa, oil, and salt in a blender or food processor. Blend on medium until you have a nice purée—it should be thick with no obvious chunks.

3. Transfer the blend to a medium-sized pot and cook on medium heat for about 15 minutes. Let cool.
Step 4
4. Debone the chicken breasts and place them in a large mixing bowl. Pour the sauce over the top. Cover and refrigerate for 6 to 12 hours.

5. Preheat the broiler. (These are also great cooked on the grill.)

6. Place the chicken under the broiler and use the marinade to baste the chicken every few minutes. Turn the chicken over when the first side gets brown and cook again.
Step 7
Chicken breasts take 10 to 20 minutes to cook thoroughly. Cut into the center of one breast to make sure it is cooked through before serving.
Step 8
7. Cut the remaining 2 key limes in half. Before serving, squeeze the juice of ½ a lime onto each breast.
