Step 1
Whisk 1 (about 14-ounce) can coconut milk in a medium bowl until smooth. (If needed, microwave in 30-second intervals, whisking between each, until smooth.) Whisk in 1/3 cup coconut water, 1 tablespoon honey, 1/2 teaspoon vanilla extract if desired, and 1/8 teaspoon kosher salt until smooth. Whisk in 1/3 cup chia seeds until combined.
Step 2
Cover and refrigerate until starting to thicken, about 2 hours. Whisk again to loosen any clumps. Cover again and refrigerate until thickened and set, 6 hours to overnight.
