combine water, starter, honey/sugar

Add flour, salt, yeast

Mix until stiff dough forms then add mix ins
Knead 8-10 mins

Cover & let rise 1-3 hrs until slightly puffy
Step 5
Divide into 8 pieces Roll into balls
Poke hole in center & stretch into bagel
Place onto parchment
Step 6
Cold proof 8-12 hours
Step 7
Preheat oven to 425
Step 8
Boil 1tbsp of brown sugar and baking soda and each side of bagel 30-45 seconds
Step 9
Bake 20-25 mins
