Instructions
Step 1
In a food processor, pulse fish until it forms a thick, sticky paste.
Step 2
Add in chicken broth, seafood seasoning, potato starch and vegetable oil. Process until well-combined.
Step 3
Add egg white and process until mixture becomes sticky and binds together.
Step 4
Shape mixture into crab leg or lump shapes.
Step 5
Bring a pot of kosher chicken broth to boil. Add shaped “crab” pieces and poach 3-5 minutes until cooked through.
Step 6
Chill poached imitation crab in ice bath to set shapes. Store chilled in fridge.
