Cake
200gbutter
200ggolden caster sugar
200gplain flour
4eggs
4 Tbspgin
1lemon
zested and juiced
2 tspbaking powder
Gin syrup

Instructions
Step 1
Preheat oven to 160fan and line 20x30 baking tin with greaseproof paper
Step 2
Beat together the butter and the sugar, add the eggs, and flour and beat till combined
Step 3
Fold in the gin, lemon zest, and lemon juice then pour into the tin and spread out. Bake for 25-30 minutes
Step 4
Make the syrup by mixing all the ingredients, leave the cake to cool for 10 minutes then poke holes with a fork and pour over the drizzle
Step 5
Beat the butter till soft then add in the icing sugar, gin, lemon juice and lemon zest and beat till fluffy.
Step 6
Spread the buttercream over the cake and sprinkle some zest then cut into squares to serve
