Instructions

Step 1
In a large bowl, cream the butter, sugar, soda, salt, spices until light and creamy. Add the treacle and water, mix well blended. Slowly stir in flour, adding a little more if moist. Cover tightly and CHILL FOR AT LEAST 2 HOURS OR UP TO 4 DAYS. Take about ¼ of the dough and roll out until 5mm thick Cut out gingerbread people shapes using cutters. Add each details such as eyes, buttons or hats. Make sure that the biscuits are no thicker than 1cm at any one point otherwise they will not cook evenly. Use a wide spatula to transfer each gingerbread man to a lightly buttered tray. Bake until firm & golden. Remove biscuits to a wire rack to cool. Decorate with icing when cold. Store in an airtight container.
