Instructions

Step 1
Measure flour and salt into a large bowl. Add ham and grated cheese and toss everything together with a fork. Drain the pineapple, reserving the juice. Make the juice up to 1 cup with milk Put the crushed pineapple, liquid mixture, melted butter and egg in a small bowl and mix until well combined, again using the fork Pour the liquid into the flour mixture, and fold together until the flour is moistened, taking care to avoid over mixing. Spoon the mixture into muffin pans, that have been sprayed or lightly buttered. If you like, top the muffins with a little extra grated cheese/parmesan cheese. Pop in the oven until tops and sides are brown, and the centres spring back when lightly pressed. Remove from oven and allow to cool in the pans for a few minutes before turning out and cooling on a wire rack.
