Ingredients

Dressing
1 cupblueberries
fresh or frozen, thawed
¼ cupbalsamic vinegar
½ cupExtra virgin olive oil
1 Tbspallulose
1clove garlic
minced
1 tspdijon mustard
salt
pepper

Instructions
Step 1
Combine dressing ingredients in a food processor. Process on high 30-60 sec until completely smooth and magenta colored.
Step 2
Optional...pour mixture through fine mesh strainer.
Step 3
Dressing can be kept 1 week in refrigerator.
Goat Cheese
Step 4
Instead of crumbling the cheese directly into the salad (where it can get messy and "muddy" the dressing), try freezing the log for 15 minutes before slicing. This allows you to get clean, beautiful coins or distinct crumbles that sit neatly on top of the greens.
Step 5
Lay down a bed of greens and top with fresh blueberries, goat cheese, fried onions, and dressing
