Instructions

Step 1
In a large skillet cook chorizo, onion, red pepper, and jalapeños over medium heat 7-8 minutes, or until tender; breaking chorizo into crumbles. Drain and set aside.
Step 2
In a greased slow cooker, layer potatoes, chorizo mixture and cheese. In a large bowl, whisk eggs, milk and seasoning and pour into the slow cooker.
Step 3
Cook covered on low for 4-6 hours or until eggs set and thermometer reads 160 degrees. Uncover and let stand for 10 minutes before serving.
