Sweet Potato Brownies

Instructions

Step 1
Preheat oven to 180°C / 350°F and poke sweet potatoes and microwave until soft on the inside (might need twice as much uncooked weight)
Step 2
Line an 8 × 8 inch, 20 × 20 cm pan with baking paper
Step 3
In a bowl, peel and mix sweet potato, peanut butter, cocoa powder and maple syrup until smooth
Step 4
Fold through the dark chocolate chips
Step 5
Spread evenly into the pan
Step 6
Bake for 18–21 minutes, until a toothpick comes out with moist crumbs
Step 7
Allow to cool before slicing, they firm up as they set
