Instructions

1. Preheat the oven to 400°F.

2. Line a muffin pan with paper liners.

3. If you do not have buttermilk, make a quick almond milk version: add 1 teaspoon lemon juice or vinegar to a measuring cup, then add almond milk until it reaches ⅓ cup total. Stir and let it sit for 5–10 minutes.

4. In a large bowl, beat the butter, oil, and sugar until light and creamy.

5. Add the vanilla, then mix in the eggs one at a time.

6. Mix in the dry chocolate pudding mix until combined.

7. In a separate bowl, whisk together the cake flour, cocoa powder, baking soda, baking powder, and salt.

8. Add the dry ingredients into the wet mixture in two parts, alternating with the sour cream. Mix just until no flour streaks are left.

9. Add the buttermilk or almond milk buttermilk substitute and mix gently until combined.

10. Fold in the chocolate chunks.

11. Cover the batter and chill for at least 1 hour, or overnight for the best bakery-style flavor and rise.

12. Scoop the batter into the jumbo muffin liners. Fill them pretty full so they bake with a tall dome.

15. Keep the muffins in the oven and lower the temperature to 325°F. Bake for about 20 more minutes, or until a toothpick comes out clean.
