Radish salad

Take 1 kg of radishes with their greens. If they’re large, cut them in half or into quarters, and trim the greens a little as well. Add 2 tablespoons of salt, mix well, and massage them a bit with your hands. Let them sit for 1 hour. Then rinse under cold water and drain well. Chop a bunch of green onions, cilantro, chili peppers, and 4–5 cloves of garlic. You can add carrots or cucumber cut into matchsticks, but I didn’t. Mix everything with the radishes, then add: * 1 tablespoon of sugar (optional) * 3 tablespoons of vinegar (I used rice vinegar) * 1 tablespoon of hot pepper * 500 ml of cold water Mix well, cover with a lid, and refrigerate for 24 hours.
