Instructions

Step 1
Preheat over to 400°
Step 2
Soak the bran flakes in the milk for about 10 minutes, while you gather everything else
Step 3
For the batter, combine all the wet ingredients and mix well. Note: Only add the bran-milk mixture to this once the bran has been soaking for at least 10 minutes
Step 4
In a separate bowl, combine all the dry ingredients, except the chocolate chips
Step 5
Add half the dry ingredients to the wet ingredients bowl, mixing slightly. Then add the rest of the dry ingredients and mix until well combined. If the batter seems stiff, add a little more milk 1/4 cup at a time until the batter is like cake batter
Step 6
Fold in the chocolate chips. Set aside on the counter and begin preparing the streusal topping
Step 7
For the streusal topping: Combine the butter and other ingredients by either blitzing in a food processer in short bursts, just until you have large bean size pieces or do this by hand in a mixing bowl by squeezing the drying ingredients and butter together over and over, until there are large bean size pieces
Step 8
Divide batter into JUMBO muffin tins at 2/3 - 3/4 full and top with 1-2 Tblsp on the streusal
Step 9
Bake at 400° for about 20 mins or until golden brown on top and an inserted toothpick/skewer comes out dry
