Instructions

Step 1
Dice half of the pickles into small cubes and slice the remaining half. Peel and thinly slice the red onion. Shred the romaine lettuce. Mix the diced pickles, mayonnaise, mustard together. Season with salt and pepper.
Step 2
Heat oil in a frying pan over high heat. Add the chicken mince and cook, stirring frequently, until browned. Remove the pan from the heat and stir in the BBQ sauce. Season with salt and pepper.
Step 3
Toast the burger buns on both sides in a dry frying pan.
Step 4
Assemble the burgers by layering the romaine slaw, BBQ chicken, red onion slices, and pickle slices between the burger buns. Enjoy!
